
5 Easy Dump-and-Go Slow Cooker Meals for Busy Weeknights
When life gets busy, complicated recipes are the first thing to go. These dump-and-go slow cooker meals are the ones I make on repeat because they’re easy, comforting, and perfect for busy weeknights.

1. Shredded Chicken for Meal Prep
This is one of the easiest slow cooker meals for the week.
Ingredients:
- Chicken breasts or thighs
- Olive oil
- Salt, pepper, garlic powder
- A splash of chicken broth
I use this shredded chicken for salads, wraps, bowls, and quick dinners all week long.
Instructions: Add all ingredients to the slow cooker, give it a stir, and cook it for 3 hours on high or 6 hours on low.
2. Slow Cooker Taco Soup
This recipe is one of my all-time favorites and is a hit with everyone in my family.
Ingredients:
- 1 lbs lean ground beef or turkey
- 1 packet taco seasoning
- 1 small yellow onion, diced
- 1 packet of ranch seasoning
- 1 can of stewed tomatoes (blend them with an immersion blender if you don’t like chunks of tomatoes)
- 1 can of pinto or black beans, drained and rinsed
- 1 can of whole kernel corn
- 1 can of rotel tomatoes
Instructions: Set your Ninja slow cooker to sear and brown your lean ground meat (you can do this step in a skillet if your slow cooker does not have the sear feature). Drain the excess liquid. Once browned, add the onion, two packets of taco seasoning, a quarter cup of water. Simmer until onions are translucent. When this is done, switch the Ninja slow cooker to low and add the remaining ingredients. (If you cooked in a skillet, this is when you would pour your meat mixture into you slow cooker and then add your ingredients). Set the timer to 8 hours and come back to a delicious, flavorful, and healthy meal. Top with whatever toppings sound good to you: sour cream, avocado, or cheese.
I usually double this recipe and we eat on it for days. I freeze anything that hasn’t been eaten after three or four days.

3. Cozy Slow Cooker Chili
This easy slow cooker chili is comforting and great for leftovers.
Ingredients:
- 2 lbs lean ground beef or turkey
- 2 packets chili mix
- 1 large white onion, diced
- 2 green bell peppers, diced
- 1 can of rotel tomatoes
- 1 can of petite diced tomatoes
- 1 can of kidney beans, drained and rinsed
- 48 oz of V8 or beef broth (its just preference)
Instructions: Set your Ninja slow cooker to sear and brown your ground meat. Drain excess fluid. Add all other ingredients, stir, cover, and set for four hours on low. Top with your favorite toppings!
It’s perfect for meal prep and freezes well for later. I load it into my glass meal prep containers for my husband and I to grab as we run out the door in the mornings.

4. BBQ Pulled Chicken
One of the simplest dump-and-go slow cooker recipes.
Ingredients:
- 2-3 lbs boneless, skinless chicken breasts or thighs
- 1 cup BBQ sauce (Sweet Baby Ray’s or Kinders are my favorite)
- 1/2 cup of chicken broth (or water if you don’t have broth)
- 1 small onion, sliced
- 1 tsp garlic powder
- 1 tsp smoked paprika
- salt + pepper to taste
Instructions: Place chicken in the bottom of your slow cooker. Sprinkle in salt, pepper, garlic powder, and smoked paprika. Add onion slices. Pour chicken broth and then cover the tops of the chicken with your favorite BBQ sauce. Cook on low 6 to 7 hours or 3 to 4 hours on high. Shred and enjoy!
Serve it on sandwiches, in bowls, or with roasted vegetables for an easy dinner.
5. Simple Slow Cooker Pot Roast
This is my go-to comfort meal for busy weeks.
Ingredients:
- 3–4 lb chuck roast
- 1 lb baby potatoes
- 3 to 4 carrots, peeled and cut into chunks
- 1 onion, sliced
- 1 packet of onion soup mix
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp italian seasoning
- 1 cup of beef broth
- 2 tbsp Worcestershire sauce
Instructions: Pat the roast dry and season all sides with salt, pepper, garlic powder, onion powder, and italian seasoning. Set your Ninja slow cooker to sear. Once its heated, sear all sides of the chuck roast to lock in moisture. Set the Ninja slow cooker to low and layer the potatoes, carrots, and onion in the bottom of the slow cooker. Place the roast on top of the vegetables. Mix the beef broth, and Worcestershire sauce. Pout around (not over) the roast. Sprinkle the onion soup mix on top of the roast. Cook on low for 8 to 10 hours. (You can cook on high for 5 to 6 hours, though it will not be as tender.)
It cooks all day and makes dinner effortless and is always a hit with my family.
